Chardonnay and Sauvignon Blanc in a blend of great charm and elegance: the triumph of structure and aroma. Blend of Chardonnay and Sauvignon Blanc grown on clayey soils with gravelly substrate. The vineyards have an average age of 12-15 years and a yield of 80 quintals of grapes per hectare. Vinified by soft pressing and fermented at a controlled temperature in Allier oak tonneaux. Aged for 3 months with the bâtonnage technique, in 5.5 HL medium-toasted Allier tonneaux, and another 3 months in the bottle.
Pairing: Roasted guinea fowl, baked turbot, shellfish, ricotta tortelloni topped with butter and sage.
